You’ve probably heard that draft beer tastes better than bottled or canned beer. But why? There are real scientific reasons why you savor the flavor of draft beer – and it’s not just because it’s classier to drink straight from a glass.
Fresher
It’s true! Draft beer is fresher because it doesn’t sit around during bottling or on shelves after being made.
Not Pasteurized
Pasteurization is a process where liquid is heated to a high temperature to kill germs. This is necessary for bottled beers because of how long they are stored before being consumed. Draft beer is simply refrigerated up until the time it’s served.
Less Prone to Oxidization
Exposure to air leads to oxidization. Oxidization, in general, negatively affects the flavor of alcohol. The hops, carbohydrates and alcohol in beer are all highly susceptible to oxidization. Exposure to oxygen increases for bottled beer because it’s divided in individual containers before it’s served. Draft beer, on the other hand, is stored in large filled kegs with pressurized tops.
No Light Exposure
Beer often comes in glass bottles that let in light. Light reacts with the hops in beer and ends up making it more bitter than intended. That’s why beers in clear or light colored glass “skunk” faster than those in brown bottles. The benefit of draft beer is that you have more control over the flavor up until it’s served. That way, you don’t have to account for variable factors, like light exposure.
To achieve all the flavor advantages of draft beer, it’s important to have hygienic lines, free of unwelcome microbes that will harm or distort the flavor of your beer.
